 इस्तेमाल किए गए फ्राइंग ऑइल की रासायनिक संरचना (chemical composition) बदलती है और फ्री फैटी एसिड जारी करती है। तला हुआ तेल दोबारा बार-बार प्रयोग में लाने से यौगिकों (compounds) की विषाक्तता (toxicity) लिपिड जमाव (lipid deposition), ऑक्सीडेटिव तनाव (oxidative stress), उच्च रक्तचाप (hypertension), एथेरोस्क्लेरोसिस आदि का कारण बन सकती है।
